I admit I’m impressionable. After I first read Siddhartha, I fasted for 3 days…twice. I remember sitting on a lawn chair out in the brutal midwest summer sun down at Earthcircles, watching the flies land on my bare feet and reveling in the connection I felt with one of mankind’s least respected creatures. I’m sure–though I don’t remember this part–I wanted to give up all my worldly possessions in my lightheaded delerium. And now I’m a raging capitalist. Well not exactly…but 10 years later I haven’t gotten rid of all my stuff just yet.

Anyway, I mention that because I just read Michael Pollan’s The Omnivore’s Dilemma and it left quite an impression. It’s an excellent book and I strongly recommend it to anyone with an interest in where their food comes from. And if you don’t care where your food comes from…well, read it anyway and maybe you will when you’re done.

He traces four meals from their very origin through all their stops on the way to his dinner plate. In the case of a McDonald’s hamburger that means going from the cornfields where the cattle feed is grown to the feedlot, the slaughterhouse, the processing plant, etc. all the way to the drivethru. For a meal he hunts and gathers himself, it means shooting and butchering a wild pig, picking wild cherries, growing lettuce and herbs and hunting morel mushrooms.

The section that I found most fascinating was on grass farming. He spends a couple weeks with a farmer in Virginia who uses an aggressive management technique to feed his cows, chickens, pigs and rabbits without using pesticides, fertilizers or practically any external input whatsoever. The animals, the grass, the surrounding woods all form a complete, sustainable ecosystem. It’s only the expertly-timed moving of the animals so they always get the grass at it’s peak and for just long enough to stimulate the grass to grow back quickly that accelerates the natural process enough for him to make a living selling eggs and meat. And what eggs and meat! The eggs are eggier, the chickens more chickeny, and of course all the animals live a decent life, free to graze the little parcels of grassy land and move on a few days later to the next parcel. It’s almost enough to make a vegetarian have second thoughts…especially when you read the sections on Industrial Organic (i.e. The Whole Foods empire) and the history of the animal rights movement. But rather than start eating grass-fed, free-range cows, what it really made me want to do was to become a grass farmer myself.

If you thought all you had to do was look for the little green USDA Organic sticker to know you were getting “good, safe, healthy” food, think again. It’s a good start, but unfortunately there’s much more to it than that. I won’t recount the entire book here, but it delves into all these issues. Check it out.

One more resolution crossed off my list. I made my first two challahs today, and they worked out just fine. They’re really wonderful to look at, and then they taste good, like a challah should.

These were meant to be a warmup for the ones I’ve been requested to make for Rosh Hashanah. I tried to get a recipe from a known expert, but when that didn’t work out, I went back to my bread bible Bake Your Own Bread. The batch I do next will be round and have raisins. I’m not sure why it’s supposed to be round, but I think the raisins are for a sweet new year.

This leaves only lasagna and some non-food related resolution left on my list. I confess that I’ve lost track of what that other challenge might have been…but it couldn’t have been that important if I can’t even remember it.

I don’t know if I ever used a sifter or pastry brush before I turned 30, but these days it seems like I use them every week. Scanning some scone recipes (I’m looking for a good recipe for savoury scones) I found someone mention that sifting the dry mix multiple times is the key to her scones. I sifted this batch twice and they turned out pretty damn good–very light.

It seemed like bagels and biscotti weren’t enough for everybody. All anybody was asking about was scones. So I found a recipe and tried it. Pretty easy, and really yummy.

These had currants, but I also did cinnamon chocolate chip and blueberry. I wasn’t really satisfied with the cinnamon chocolate chip (maybe I needed to use dark chocolate chips instead of semi-sweet), but the currant ones are just perfect.

It was Mike Smith’s birthday yesterday and I baked him this cake. It’s supposed to be a hula-hooping, trombone player walking down a mushroom-lined path to the forest of 40. Originally, I planned to have some gnomes and bunnies as well.

I don’t think I’m going to do frosting decoration anymore–it could be one of those things that I just have to do the right way once before I get it…but I’ve tried it a few times now and for me it’s so much harder than it looks that I think I’m better off spending my time baking.

I made biscotti today, and I don’t mind saying that they’re great. Just yesterday I noticed that the Sullivan Street Bakery has put online the bread recipe I use as the starting point for all breads these days. Biscotti di Prato was the other recipe they posted, so I figured it had to be a winner, and it was.

The only thing I did differently from the recipe was to use hazelnuts instead of almonds. Yum! Next time I’m going to use chocolate.

My 2nd attempt to make ravioli (a close relative, anyway), and it turned out pretty good! The filling is spinach, ricotta and Parmesan with a pinch of nutmeg.

I do have this habit of trying to follow a recipe the first time and ending up with twice as much as I’m supposed to. Could be the recipe maker’s fault…could be mine. This was supposed to make 24 dumplings, and this photo does NOT show all the dumplings. I think there were 66 in all, and there was dough and filling to make probably another 20.

What doesn’t make sense to me is that the dough and the filling came from 2 different recipes–they both made 3x as much as they said? Plus, the dough probably should have been thinner, yielding even more dumplings.

I wasn’t too pleased with the mushroom sauce (too salty), but these were great the 2nd day in plain old, store bought spaghetti sauce.

It was good to finally get the homemade pasta monkey off my back…

Bread fanatics, zoom in on this photo and look at that beatiful texture. I don’t mind bragging, because it’s not really my recipe. It came from a guy named Jim Lahey who has a bakery in Manhattan. I’ll be in the neighborhood in a couple weeks and would love to stop by to give props and scope out the other goods. But it happens to be Passover (my occasion for visiting, in fact), and though I don’t really observe the no bread rule, I might get swept up in something and feel the need to avoid the bakery scene. Still, New York, land of cupcakes, how can I miss out on that?

Anyway, this is the bread I wrote about before that has no kneading required, only I substituted some flours and added carroway seeds to make it rye. If you don’t know about this recipe and are even remotely interested in baking your own bread, drop me a line and I’ll get you going with this one.

Here are the donuts with frosting. It was actually too sugary for my taste. Kinda made your teeth start chattering uncontrollably. Next time I’ll ease off the powdered sugar and use a darker chocolate.

Although it wasn’t on my short list of foods to learn how to make this year, I was inspired about a week ago to make donuts.

Once an addiction, then a guilty pleasure, now practically just a memory; I decided that if I could make my own donuts, they’d be healthy.

They weren’t quite up to Bennison’s quality, but they kicked Dunkin’ Donuts ass! And, of course, they were made with organic ingredients, including the chocolate frosting that went on after this photo.

The heart-shaped world I live in is mostly due to Sara’s needing to buy any kitchen item that is shaped like a heart (waffle iron, casserole, cookie cutters, pancake pan, etc.) But there really is a lot of love that goes into these old fashioned donuts. Also a lot of oil–they are fried cake, after all.

Now if I could figure out how to make heart-shaped bagels…
